Spring means growth… of weeds in the garden! ⠀
My motto: if you can’t defeat it, eat it! ?⠀
This pesto was made of fresh elder (zevenblad), a handful of green olives, salted cashews, 1 small stalk of mint, Chinese chives, which grows plentiful in my garden, garlic, olive oil, black pepper and bit of salt. Then I grated some zucchini with the julienne peeler( I have no idea if that is an English word:)) and mixed it with some pasta and pesto. Easy schmeasy !!!⠀
- a bunch elder (zevenblad)
- 8 green olives
- a handful salted cashews
- 1 small stalk of mint
- 5 pieces Chinese chives
- 1 clove garlic
- olive oil
- 1/2 tsp black pepper
- pinch Himalaya salt
- 1 zucchini
- pasta optional

Add everything, except the zucchini and pasta, in a blender.

Make sure you add enough olive oil, so it becomes a smooth paste.

Then grate some zucchini with the julienne peeler.

Mix it with some pasta(optional) and the pesto.
Easy schmeasy !!!
