Zucchini Pasta Elder Pesto and Green Olives

Spring means growth… of weeds in the garden! ⠀
My motto: if you can’t defeat it, eat it! ?⠀
This pesto was made of fresh elder (zevenblad), a handful of green olives, salted cashews, 1 small stalk of mint, Chinese chives, which grows plentiful in my garden, garlic, olive oil, black pepper and bit of salt. Then I grated some zucchini with the julienne peeler( I have no idea if that is an English word:)) and mixed it with some pasta and pesto. Easy schmeasy !!!⠀

Ingredients
  • a bunch elder (zevenblad)
  • 8 green olives
  • a handful salted cashews
  • 1 small stalk of mint
  • 5 pieces Chinese chives
  • 1 clove garlic
  • olive oil
  • 1/2 tsp black pepper
  • pinch Himalaya salt
  • 1 zucchini
  • pasta optional
Directions
  1. Add everything, except the zucchini and pasta, in a blender.


  2. Make sure you add enough olive oil, so it becomes a smooth paste.

  3. Then grate some zucchini with the julienne peeler.

  4. Mix it with some pasta(optional) and the pesto.
